Strawberry Lemon Granita

Strawberry Lemon Granita is a granita made with lemons and strawberries. Granita is a frozen dessert which originated in Sicily, Italy. It is a summer dessert usually made with lemons, strawberries, melons or any other summer fruits and syrup.It is similar to sorbet in that it also has fruits, sugar and water. But whereas, sorbets have a smooth texture, granitas resemble ice flakes. Granita puree is poured into a pan and placed in the freezer. It is then taken out multiple times and the surface scraped.  Like the name suggests “granita” has a granite like texture and is not smooth like sorbets or ice cream. The most popular granita flavours are chocolate (made with cocoa), lemon, strawberry, pineapple, peach, oranges etc.  It is a Silican favourite dessert.

This dessert is similar to the “Golas” from India, which are crushed ice with syrup served on a stick or glass. It is also very similar to the Slushy available in North America. This is a perfect recipe for those hot and humid summery days. Unlike ice creams, Granita is gluten-free, dairy-free and vegan as it does not use anything apart from fruits, water and sugar.

  • Wash and cut the strawberries, removing the green tops.
  • Blend the berries, lemon juice, sugar and water in an electric blender. Pour this blend into a large glass dish.
  • Put the glass dish into the freezer, uncovered for about 4 hours, taking it out every 30 minutes stir it up with a fork. This scraping with fork at intervals is essential. Otherwise, the liquid will solidify and will not form the required crystal like texture of a granita.
  • After 4 hours, when done, served chilled in desired glasses, garnishing with mint leaves and a slice of lemon. This is a wonderful dessert for those hot and humid days.
