Tostones are double fried plantains commonly found in South American cuisine. They are also called patacones. I used Hawaiin plantains for this recipe. Instead of double frying them in oil, I used the Air Fryer. Serve tostones with any dip of your choice.

- Peel plantains and trim the ends. Cut a slit along the length deep enough to penetrate the skin without cutting the plantain.cut them into thick rounds about 1 inches. Place the cut pieces in a bowl of water to retain its colour.
- Now pat the plantain pieces dry and drizzle them with olive oil coating all sides.
- Preheat Air Fryer to 350 degrees F and place the plantain in the Air Fryer for about 4 to 5 minutes. Then flip and cook for another 4 minutes.
- Remove the fried plantains and flatten/smash each pieces with the back of a glass or wooden press.
- Mix a little olive oil, salt, garlic powder together in a small bowl.
- Spritz the oil mixture onto the flattened plantains and place the in the Air Fryer once again. Fry on 400 degree F for about 4 to 5 minutes on each side.
- Serve double fried tostones with any dip of your choice.
