Spinach Rice (Green Rice)

Spinach Rice is a healthy rice recipe which looks great too. Here is my version.

  • Wash and soak rice in cold water for about 10 minutes.
  • Next, wash spinach and chop the leaves roughly.
  • Now heat ghee/oil in a pan. Add chopped onions, green chilli and spinach, salt to taste. Stir for 2 or 3 minutes or until the leaves are wilted. Switch off fire.
  • Let it cool, about 5 minutes. Then add the spinach mix into a blender along with 2 cups of water and puree.
  • Now drain the soaked rice and place into a rice cooker. Add spinach puree, mix well. Add about 2 cups water and set rice to cook according to instructions.
  • Once the rice is cooked, garnish with roasted cashew and fried onions. Serve with raita or plain yogurt.

Notes

Alternate ways of cooking:

Pan cook method: Pan cook  rice and spinach puree, adding enough water in a heavy bottom pan on medium flame for 20 minutes.

Pressure cook method: Pressure cook  rice and spinach puree, adding enough water in a pressure cooker for 2 whistles.
