Spinach Rice (Green Rice)

Spinach Rice is a healthy rice recipe which looks great too. Here is my version.

Ingredients
  • 2 cups Basmati Rice
  • 400 gms. Spinach leaves (fresh)
  • 1/2 onion
  • 1 green chilli
  • 2 tsp. ghee or olive oil
  • 4 cups water (to cook rice)
  • pinch of salt
  • 1/4 cup cashewnuts and fried onions (for garnish)
Instructions
  1. Wash and soak rice in cold water for about 10 minutes.
  2. Next, wash spinach and chop the leaves roughly.
  3. Now heat ghee/oil in a pan. Add chopped onions, green chilli and spinach, salt to taste. Stir for 2 or 3 minutes or until the leaves are wilted. Switch off fire.
  4. Let it cool, about 5 minutes. Then add the spinach mix into a blender along with 2 cups of water and puree.
  5. Now drain the soaked rice and place into a rice cooker. Add spinach puree, mix well. Add about 2 cups water and set rice to cook according to instructions.
  6. Once the rice is cooked, garnish with roasted cashew and fried onions. Serve with raita or plain yogurt.
Recipe Notes

Alternate ways of cooking: Pan cook method: Pan cook  rice and spinach puree, adding enough water in a heavy bottom pan on medium flame for 20 minutes. Pressure cook method: Pressure cook  rice and spinach puree, adding enough water in a pressure cooker for 2 whistles.
