Spinach and Mung Bean Sprout Soup

This is a healthy and nutritious soup with spinach and moong sprouts.

  • Clean and chop spinach. Blanch it and keep aside.
  • Cook sprouts in 1/2 cup water and keep aside.
  • Saute the shallots and garlic in a small pan with some butter/oil.
  • Now put all the ingredients in a blender along with 2 cups milk and blend to a smooth consistency.
  • Pour the soup into a saucepan, add salt and pepper to taste and bring it to a boil and then simmer for a couple of minutes. Serve hot.
