Spinach and Mung Bean Sprout Soup

This is a healthy and nutritious soup with spinach and moong sprouts.

Ingredients
  • lb spinach leaves
  • 3/4 cup moong bean sprouts
  • 1 tbsp. butter
  • 2 shallots/small onion
  • 2 cups milk
  • a little salt and pepper to taste
Instructions
  1. Clean and chop spinach. Blanch it and keep aside.
  2. Cook sprouts in 1/2 cup water and keep aside.
  3. Saute the shallots and garlic in a small pan with some butter/oil.
  4. Now put all the ingredients in a blender along with 2 cups milk and blend to a smooth consistency.
  5. Pour the soup into a saucepan, add salt and pepper to taste and bring it to a boil and then simmer for a couple of minutes. Serve hot.
