  • Boil potatoes in a pot of boiling water until they are fork tender, about 20 minutes. Peel and mash them, adding a little salt, pepper, 1 cup cheese and milk.
  • Heat oil in a pan and fry until translucent. Add chopped ginger and garlic and saute for a minute. Now add in the ground meat along with a little salt to taste. Fry this for about 10 minutes on medium heat or until the meat is no longer pink. (There is no need to add water as the meat will cook in its own juices).
  • Now add in all the ground spices -chilli, cumin, coriander and garam masala. Mix well. At this stage, if the mixture is too runny/watery, add a couple of tbsp. of all purpose flour and mix well.
  • Now add in the pureed tomato. Let this cook for 5 minutes. Finally add the carrots and peas. Mix well and turn off the heat.
  • Heat oven to 350 degrees F. Take a large casserole/baking dish and put the meat mixture in it. Top it with dollops of mashed potatoes. At this stage, if you wish, take a fork and make horizontal and vertical lines across the potato topping (this will give it a neat look). Now put the rest of the grated cheese on top and bake the pie in the oven for about 25 to 30 minutes.
  • Remove from oven and sprinkle some ground pepper all over the pie. Cool for 10 minutes and serve.
