Roasted potatoes is a easy side dish to make for meats, chicken or fish entree. Here is a roast with baby potatoes. I like roasting them with their skin on, but feel free to peel before baking.

- Keep a pot of water for boiling. When the water comes to a rapid boil, add whole washed potatoes and par boil about 4 minutes. Drain water and keep aside.
- Preheat oven to 450 degrees F.
- Place potatoes in a large roasting pan ad toss them with oilve oil, herbs and spices. Ensure the potatoes are not overcrowded in the pan.
- Now place the pan in oven and bake about 50 to 55 minutes. While baking, rotate the potatoes and flip them around a few times in between. This will help roasting evenly on all sides.
- Remove potatoes when they are golden brown on the edges and tender when pierced with a fork. Serve warm.
