Roasted Baby Potatoes With Garlic And Herbs

Roasted potatoes is a easy side dish to make for meats, chicken or fish entree. Here is a roast with baby potatoes. I like roasting them with their skin on, but feel free to peel before baking.

Ingredients
  • 3 cups baby potatoes (any kind)
  • 2 tbsp. olive oil
  • 3 tbsp. mixed herbs of choice (thyme, rosemary, oregano, paprika, lemon grass)
  • 1/2 tsp. garlic powder
Instructions
  1. Keep a pot of water for boiling. When the water comes to a rapid boil, add whole washed potatoes and par boil about 4 minutes. Drain water and keep aside.
  2. Preheat oven to 450 degrees F.
  3. Place potatoes in a large roasting pan ad toss them with oilve oil, herbs and spices. Ensure the potatoes are not overcrowded in the pan.
  4. Now place the pan in oven and bake about 50 to 55 minutes. While baking, rotate the potatoes and flip them around a few times in between. This will help roasting evenly on all sides.
  5. Remove potatoes when they are golden brown on the edges and tender when pierced with a fork. Serve warm.
