Here is an easy recipe for gravy made with white wine, chicken stock and pan drippings.

- Pour out the fat and liquid gravy from the roast chicken pan, leaving in the red onions. Add flour to the pan and whisk well, adding a little reserved fat if necessary.
- Place the pan over low heat and roast the flour until it turns a light brown colour. This will take about 5 minutes.
- Now add in the white wine and mix well.
- Slowly add in 2 cups of chicken stock, al little at a time, thoroughly whisking it well at each intervals. Let the gravy thicken about 6 to 7 minutes. Adjust seasonings, adding a little salt and pepper if necessary.
- Turn off the flame and strain out the gravy into a small bowl.
