Gravy Recipe for Roast Chicken

Ingredients
  • 1/4 cup white wine
  • 1/2 cup drippings from roast chicken
  • 3 tbsp. flour
  • 2 cups chicken stock
  • a little salt and pepper to taste ((if needed))
  • some fresh herbs (rosemary, thyme) (to taste)
Instructions
  1. Pour out the fat and liquid gravy from the roast chicken pan, leaving in the red onions. Add flour to the pan and whisk well, adding a little reserved fat if necessary.
  2. Place the pan over low heat and roast the flour until it turns a light brown colour. This will take about 5 minutes.
  3. Now add in the white wine and mix well.
  4. Slowly add in 2 cups of chicken stock, al little at a time, thoroughly whisking it well at each intervals. Let the gravy thicken about 6 to 7 minutes. Adjust seasonings, adding a little salt and pepper if necessary.
  5. Turn off the flame and strain out the gravy into a small bowl.
