A Focaccia is a flat oven-baked bread which originates in Italy. The dough texture is similar to that of a pizza and this bread like pizza has toppings such as rosemary, tomatoes or olives on it. It is usually served as an antipasto or appetizer.

- Take 1 cup warm water ( about 105 to 110 degrees F)in a glass bowl and mix in 2 tbsp.active dry yeast and 2 tbsp.sugar. Leave it aside to rise about 10 minutes.
- In an electric mixer, take the flour, a little kosher, salt to taste, olive oil and the yeast mixture.
- Using the dough attachment, knead the flour into a dough.
- Add some oil into a large glass bowl and transfer the dough into this bow. Cover it with a wet towel or plastic wrap and set aside for about 2 hours.
- After the dough rise, place the dough onto a baking tray and gently stretch the dough with your fingertips pulling the dough onto all the sides.
- Sprinkle some kosher salt and ground pepper all over the bread.
- Now add a little oil and water to the bread with your finger tips, making little dimples by gently pressing down all over.
- Leave this aside again for about 40 minutes.
- Preheat oven to 400 degrees F. Meanwhile set aside the focaccia toppings.
- Place the sliced garlic, rosemary and grape tomatoes on the bread and bake for about 20 to 25 minutes.
- Then leave to cool for 5 minutes before slicing and serving.
