Focaccia Bread

A Focaccia is a flat oven-baked bread which originates in Italy. The dough texture is  similar to that of a pizza and this bread like pizza has toppings such as rosemary, tomatoes or olives on it. Ingredients
  • 1 cup warm water
  • 2 tsp. dry yeast
  • 2 tsp.sugar
  • 4 cups flour
  • a little kosher salt to taste
  • 1/3 cup olive oil
  • 18 or 20 grape tomatoes
  • 3 sprigs fresh rosemary
  • tsp. ground black pepper
  • 6 cloves garlic (thinly sliced)
Instructions
  1. Take 1 cup warm water ( about 105 to 110 degrees F)in a glass bowl and mix in 2 tbsp.active dry yeast and 2 tbsp.sugar. Leave it aside to rise about 10 minutes.
  2. In an electric mixer, take the flour, a little kosher, salt to taste, olive oil and the yeast mixture.
  3. Using the dough attachment, knead the flour into a dough.
  4. Add some oil into a large glass bowl and transfer the dough into this bow. Cover it with a wet towel or plastic wrap and set aside for about 2 hours.
  5. After the dough rise, place the dough onto a baking tray and gently stretch the dough with your fingertips pulling the dough onto all the sides.
  6. Sprinkle some kosher salt and ground pepper all over the bread.
  7. Now add a little oil and water to the bread with your finger tips, making little dimples by gently pressing down all over.
  8. Leave this aside again for about 40 minutes.
  9. Preheat oven to 400 degrees F. Meanwhile set aside the focaccia toppings.
  10. Place the sliced garlic, rosemary and grape tomatoes on the bread and bake for about 20 to 25 minutes.
  11. Then leave to cool for 5 minutes before slicing and serving.
