Easy Raspberry Tiramisu

Tiramisu in Italian means “pick me up”. This is an all time favourite Italian dessert made with ladyfingers (Savoiardi), coffee, mascarpone and eggs. Sometimes, a few drops of liquor such as Marsala wine, brandy or rum is added to the cream mixture. The ladyfingers are dipped in coffee and that is probably why the name is pick me up 🙂

Here is a recipe for tiramisu which has now become our family favourite. This can be made under 15 minutes and unlike the traditional method of using eggs, I only use whipping cream and mascarpone cheese in this easy recipe. Yesterday we went to a PYO raspberry farm and got some fresh raspberries. So as a finishing touch I have made this into a raspberry tiramisu. The raspberries add a touch of freshness to this rich dessert. I have also added a few tablespoons of orange liqueur in this recipe. You can omit the alcohol if serving it to children and add a little orange juice instead. Make this ahead of a family gathering or a party and set it to cool in the refrigerator for about 6 hours until ready to be served.

  • Whip cream with 2 tbsp. of sugar until soft peaks form. Then add in the mascarpone and beat further until you get stiff peaks (should take about 5 minutes). Add orange liqueor and vanilla to this and mix well.
  • Brew 2 cups of strong black coffee and keep aside.
  • Take a glass dish about 13 by 9 inches. Dip each ladyfinger in coffee and arrange it in the dish in a single layer. The ladyfinger should not overlap but must be side by side. Now spread the cream mixture on top. Spread it evenly with a spatula. Sprinkle a dust of cocoa pd. on the cream mixture. Then take a few raspberries and arrange it all over on to. This is your first layer.
  • Repeat with a second layer, ladyfingers, cream, cocoa and raspberries.
  • Cover the dish with a plastic wrap and put it in the refrigerator for at least 6 hours.
  • Chill for 6 hours or overnight and serve.
