Classic Panna Cotta Recipe With Fresh Berry Sauce

Panna Cotta is a dairy based Italian dessert. It can be served straight our of a dessert bowl but is often served on a plate. A fruit or fruit sauce is served along with this dessert. The term panna cotta literally means “cooked cream” and is considered to be one of those elegant desserts.

  • Place whole milk in a saucepan and sprinkle the gelatin over it. Let it stand for about 5 minutes until the gelatin softens.
  • Place pan over low medium heat and stir about 5 minutes until gelatin dissolves completely. Do not let the milk boil.
  • Now add 2 cups heavy whipping cream, 3/4 cup sugar, 1 tsp. vanilla and a pinch of salt. Continue stirring until the sugar is completely dissolved, about 5 minutes. Do not boil the milk. Remove from heat and let cool for 5 minutes.
  • Place sour cream in a glass bowl and whisking constantly, add the warm milk cream. Once the mix is completely smooth consistency, divide the cream mix into 6 dessert cups.
  • Place the dessert cups in the refrigerator for about 5 hours until it sets completely.
  • BERRY SAUCE
  • Wash berries. Cut strawberries in halves or quarters.
  • In a small saucepan, combine half of the berries (1 cup ), 1 tsp lemon juice and 3 tbsp sugar. Bring to a low boil about 5 minutes until syrupy.
  • Stir in the remaining 1 cup of berries and remove from heat. When the syrup reaches room temperature, spoon it over the top of chilled panna cotta.

Notes

Panna Cotta can also be made in ramekins and when set, removed onto a dessert place, The berry sauce can then be poured on top.
