Cheese Broccoli Casserole ( A Vegetarian Recipe )

Cheese Broccoli Casserole is an amazing side dish which is super easy to make. The goodness of broccoli and the cheesy taste makes it popular among the young and old, universally. Here is a tried and tested vegetarian recipe which I often make at home. It is a wintertime comfort food.  It is an amazing side at a lunch or dinner party table. This creamy, delectable and savoury dish is super easy to make.

I first came across the Cheese Broccoli Casserole Recipe in a “Canadian Living” magazine. https://www.canadianliving.com/food/recipe/maureens-broccoli-casserole  The recipe used mushroom soup and bread crumbs. At the time I had a few Campbell’s Cream of Mushroom Soup in my pantry. So I made this delectable soup and  everyone in our family just loved it!

Over the years, we have made this umpteen times. It is a feature on our holiday table as it pairs well with most dishes.

You can use fresh or frozen broccoli for this recipe. Broccoli is a superfood. It is a vegetable  packed with nutrients like vitamin C, vitamin K, iron and potassium.

  • Preheat oven to 350 degrees F.
  • Wash and cut broccoli into medium size florets.
  • Melt butter in a pan and add chopped garlic. Add in the broccoli along with salt and pepper to taste. Saute for 2 minutes. Now add in little flour and mix well. Gradually add in the milk. Let the milk simmer and then add in half of the cheese. Switch off flame.
  • Remove the broccoli mix into an oven safe casserole. Top it with the croutons and the remaining cheese. You may sprinkle the top with some paprika for added colour.
  • Bake the casserole for about 25 minutes until the top is browned and the cheese melts. Serve warm.
