Growing up in India, I always thought biscuits were yummy tea time cookies. But in Canada & the United States, biscuits are these soft, flaky small breads which have a crusty exterior & are soft inside, made with flour, baking powder, butter, milk etc.These are served sometimes as a savoury breakfast dish or as dinner rolls, it can also be eaten with honey, jams & fruit preserves. I wanted to make a version of these biscuits served at a favourite sea food restaurant that we frequent (they use cheddar cheese in their biscuit recipe), but turned out I only had a block of jalapeno havarti cheese in my refrigerator. So I ended up making these biscuits & must say they were delish 🙂

Instructions
- Preheat oven to 425 degrees F. Line a baking tray with parchment paper.
- Mix flour, baking pd., sugar & salt in a bowl until well blended with a whisk.
- Add grated cheese & cold butter cut with a knife & coat it into the flour mix. Then add cold buttermilk & form everything together into a dough without over mixing.
- Turn out biscuit mix onto a clean surface & cut 2" rounds with a cookie cutter & place them on a greased baking tray, placing them a little apart. Repeat this process until all the biscuits are done. Makes about 16 biscuits.
- Place in oven & bake for about 12 minutes.
- While biscuits are baking, warm a little butter & mix dried parsley into it.
- Take biscuits out of oven & immediately brush herbed butter on top. Cool for about 5 minutes & serve.
Notes
Havarti can be easily substituted with cheddar cheese.
