Blueberry Yogurt Chia Pudding

Blueberry Yogurt Chia Pudding is a super delightful and healthy morning breakfast or mid-day snack. This is so easy and delicious to make, you can have it practically every day. It’s got all the goodness of blueberries, yogurt and chia rolled into one. Blueberries are packed with Vitamin C, are anti-oxidants and very good for overall health. Yogurt is a natural probiotic and a good sorce of calcium. Chia seeds used to be the diet of the Aztecs and Mayans  and are a wonderful source of vegetarian protein. The word “chia” in Mayan stands for strength.

Soaking Chia:

It’s best to soak chia seeds in either milk or water for atleast 4 to 5 hours prior to making this recipe. I like to soak the chia in milk overnight.

Fruit Alternatives:

Yogurt Alternatives:

You can make this pudding with coconut milk or almond milk as a vegan option.

This Blueberry Yogurt Chia Pudding needs only with 3 basic ingredients -blueberries, yogurt and chia seeds. For taste enhancement, I like to add in a little maple syrup and a dash of ginger powder or cinnamon powder.

  • Start by soaking the chia seeds in milk overnight. Blend chia and milk together in a glass bowl. The chia contain a lot of fibre and so will absorb the liquid.
  • Before serving, take about 2 tbsp. of water in a small saucepan along with the blueberries and some Maple Syrup to taste. Bring it to a boil on medium heat until the berries start bursting. Turn off heat and mix well. Let it cool for a few minutes.
  • Add 1 cup yogurt to the soaked chia along with the blueberry compote and dash of cinnamon powder. Mix well and pour into two serving glasses or bowls.
  • Garnish pudding with a few blueberries and some nuts.
