Banana Bread

Banana Bread is a popular recipe world wide. This moist bread is good for breakfast or as a tea time light cake. Bananas are a popular fruit available easily world wide. It is a rich source of potassium and essential nutrients. My husband’s favourite fruit in the entire world are bananas and this tasty bread is his personal choice always. My entire family loves this bread.

Certain bread recipes such as  the Cranberry Bread recipe https://relishdelish.ca/recipes/cranberry-bread/    is only made during the Holidays or Thanksgiving. But not so with this bread, it is a year round favourite.

It is essential to use ripe bananas to make a moist Banana Bread. The darker the skin with brown spots, the better. So next time, don’t toss them the over ripened, spotty bananas. It is an easy way to use those over ripe bananas in the kitchen.

You can use whole wheat flour or even almond flour for a healthier version. For added crunch, you can use nuts (walnuts, pecans, pistachios, almonds, cashew) or even mini chocolate chips or cranberry. Or you can just make a smooth loaf with just bananas. I used white sugar as I did not have brown sugar on hand.

  • Preheat oven to 350 degrees. Peel and mash bananas and add lemon juice.
  • In a mixing bowl, add softened butter with sugar and beat until soft and creamy.
  • Add eggs, one at a time and beat well. Then add vanilla extract and the mashed bananas.
  • Combine flour, baking powder, baking soda, salt and nutmeg powder.
  • Add the dry ingredients to the mixing bowl and stir well. Pour the mixture into loaf pans and bake in the oven about 45 minutes or until toothpick inserted in centre comes out clean. Cool for 15 minutes and turn out onto rack and cool completely.
