Apple Pie

Apple pies were famous long before the European colonization of the Americas, though there is a saying in the US something like “as American as apple pie.” History books trace apple pies as far back as 14th Century. Probably the pie making skills would have transferred with the early pilgrims when they brought their precious apple seeds too, along with their other belongings. Be that as it may be, there is nothing, that warms the heart than a freshly baked apple pie on a cold wintry day here in Canada. And during the fall, there are so many varieties of apples to choose from, sometimes it’s best to buy them all and fill them up in a pie!

  • Peel and cut the apples in a glass bowl. Add sugar, lemon juice, lemon zest, cinnamon, nutmeg and a little flour, mix well and keep aside.
  • Add salt to the flour and whisk well. Cut in slices of cold butter and mix it till it forms a crumbly texture. Add the lemon juice and water and shape into dough. Let it rest in the fridge for about 30 minutes.
  • Pre heat your oven to 375 degrees F.
  • Divide the pastry dough into 2 parts.
  • Roll out one part (dust a little flour if necessary while rolling) and place it into your pie pan (about 9 inch).
  • Put the filling on top of this pastry. Add some butter on top.
  • Roll out the second part of dough and cover the apple filling. Trim the edges with a fork to give it a nice shape and make few holes on the top crust of the pie for steam to escape.
  • Brush the top with some melted butter sugar.
  • Place the pie in the oven and bake for about an 50 minutes.
  • Let it cool for another hour at least before cutting/slicing.
