Okra also known as lady fingers is a popular vegetable in South Asian cuisine. One popular recipe in North India is crispy fried okras. This recipe is called “Kurkuri Bhindi”. It is a deep fried recipe where the okra is coated with Indian spices and besan (chickpea flour). This dish is often served as a light snack. It is a wonderful accompaniment for rice and dal tadka or the Punjabi Kadhi. Here is my version of this popular recipe made in an Air Fryer.

- Wash Okra and dry them thoroughly. Cut the tops and ends of each okra and then thinly slice them lengthwise. Remove seeds.
- Add besan, turmeric, rice flour, cumin pd., chilli pd., chaat masala, lemon juice and amchur and oil into a bowl and mix into a smooth paste.
- Now add this paste onto the sliced okra and mix until it coats well.
- Leave aside for about 5 to 10 minutes.
- Just before frying, add a little salt to the okra and mix again.
- Preheat your Air Fryer to 350 degree F.
- Now place the okra into your air fryer and cook about 10 to 15 minutes or until done. Turn it over once in between.
- Sprinkle with some chaat masala just before serving.
