Air Fry Kurkuri Bhindi – Crispy Fried Okra
Okra also known as lady fingers is a popular vegetable in South Asian cuisine. One popular recipe in North India is crispy fried okras. This recipe is called "Kurkuri Bhindi". It is a deep fried recipe where the okra is coated with Indian spices and besan (chickpea flour). This dish is often served as a light snack. It is a wonderful accompaniment for rice and dal tadka or the Punjabi Kadhi. Here is my version of this popular recipe made in an Air Fryer.
Ingredients

gms. okra

tbsp.besan

tbsp. rice flour

tsp. roasted cumin pd.

tsp. chilli pd.

tsp. coriander pd.

1/4
tsp. garam masala

tsp. amchur pd.
(dried mango pd.)

tbsp. oil

tsp. chaat masala
Instructions

Wash Okra and dry them thoroughly. Cut the tops and ends of each okra and then thinly slice them lengthwise. Remove seeds.

Add besan, turmeric, rice flour, cumin pd., chilli pd., chaat masala, lemon juice and amchur and oil into a bowl and mix into a smooth paste.

Now add this paste onto the sliced okra and mix until it coats well.

Leave aside for about 5 to 10 minutes.

Just before frying, add a little salt to the okra and mix again.

Preheat your Air Fryer to 350 degree F.

Now place the okra into your air fryer and cook about 10 to 15 minutes or until done. Turn it over once in between.

Sprinkle with some chaat masala just before serving.
