Lasagna is a type of wide, flat pasta. This is an easy to bake lasagna with vegetables.

For Lasagna Filling:
- Cook Lasagna according to instructions and keep aside (in some cold water so that it does not stick). For Vegetable Filling:
- Heat butter/oil in a skillet, add chopped onions, garlic and saute for 2 minutes. Throw in the rest of the veggies and some salt, pepper and Italian seasoning to taste. Cover and cook about 5 minutes until all the veggies are fork tender. For Cheese Filling:
- Beat egg and mix it with the ricotta or cottage cheese and keep aside. Layering And Baking Lasagna:
- Preheat oven to 350 degrees F.
- Take a 9'11' glass baking dish and spray some cooking oil. Pour 1/3 of the veggies into the dish. Layer 3 or 4 of the lasagna noodles, one beside another, without overlapping. If the noodles are short on one end, you may need to cut an extra noodle and place into dish to cover the layer. Top it with 1/3 of the ricotta mix and 1/3 of the shredded cheese (mozzarella and parmesan)
- Repeat the same procedure Sauce - Noodles - Cheese Sauce- Noodles -Cheese
- Sprinkle some parsley on top of the final cheese layer for a nice touch.
- Cover the baking dish with some aluminium foil and bake for about 20 minutes.
- After 20 minutes, remove the foil and bake about 15 minutes, until the cheese bubbles and melts on top. Then change oven setting to broil the dish for about 1 or 2 minutes for the cheese to brown a little on top.
- Let rest for a few minutes after taking the dish out the the oven. Then slice and serve.
