“Achinga Payar Thoran” is a delicious dish from Kerala and is often served with rice. This is a long bean recipe (Chinese or yard long beans). This dish is easy to make but he only tricky part is cutting the beans into small even pieces.

- Wash beans and remove ends. Take 5 to 6 long beans together and chop them very fine. All the cut pieces should be small and evenly shaped.
- Chop shallots, green chillies and garlic into fine pieces.
- Heat oil in a pan and add mustard and cumin seeds. When the seeds splutter, add turmeric, onion, green chillies and finely chopped garlic. Saute for 2 minutes.
- Now add the shredded coconut, long beans and mix well. Add salt to taste and about 1/2 a cup of water. Bring to a boil and then cover the pan and cook on medium heat about 6 to 7 minutes or until the water evaporates completely. Mix well and adjust seasoning. Serve with rice and a curry dish.
