Stir Fried Chinese Long Beans (Kerala Achinga Payar Thoran )
"Achinga Payar Thoran" is a delicious dish from Kerala and is often served with rice. This is a long bean recipe (Chinese or yard long beans). This dish is easy to make but he only tricky part is cutting the beans into small even pieces.

Ingredients

tender Chinese Long beans or runner beans
(chawli, achinga payar)

shallot
-
2
cloves garlic
-
2
long green chillies

tbsp coconut oil
-
1
tsp. mustard seeds
-
1
tsp. cumin seeds
-
1/2
tsp. turmeric pd.

a little
salt to taste

cup fresh or frozen grated coconut
(can use dried too)

cup water
Instructions

Wash beans and remove ends. Take 5 to 6 long beans together and chop them very fine. All the cut pieces should be small and evenly shaped.

Chop shallots, green chillies and garlic into fine pieces.

Heat oil in a pan and add mustard and cumin seeds. When the seeds splutter, add turmeric, onion, green chillies and finely chopped garlic. Saute for 2 minutes.

Now add the shredded coconut, long beans and mix well. Add salt to taste and about 1/2 a cup of water. Bring to a boil and then cover the pan and cook on medium heat about 6 to 7 minutes or until the water evaporates completely. Mix well and adjust seasoning. Serve with rice and a curry dish.
