Smoky Halloumi with Bulgur Tabbouleh is a Middle Eastern salad made with halloumi cheese and bulgur (cracked wheat). I first came across a Halloumi recipe on Hello Fresh Canada https://www.hellofresh.ca/recipes/smoky-pan-fried-halloumi-58c97ded2310a86a5c7846d2 Since Halloumi is a Middle Eastern cheese, I was inspired to try this smoky halloumi with some middle eastern bulgur salad.
Halloumi:
Halloumi is a semi-firm cheese that originated in Cyprus. It is made from goat, sheep and sometimes cow’s milk. It is a cheese that does not lose its texture or melt while grilling or frying. Golden fried halloumi or grilled halloumi goes very well with vegetables and also with wraps and burgers. In countries like Cyprus and Turkey, halloumi is seen as part of a meze (appetizer) spread.
Tabbouleh:
Tabbouleh is a kind of salad made with bulgur (broken wheat) made in Levantine regions Syria, Israel, Lebanon, Jordan ). A similar salad is also made with quinoa called quinoa tabbouleh. https://relishdelish.ca/recipes/quinoa-tabbouleh/ There are lots of vegetables and ingredients that you can add to the tabbouleh. Parsley is a key element in making tabbouleh. Unlike most salads, this is not made with lettuce. Parsley leaves have a high content of vitamin C, K and folate. The main dressing for tabbouleh is made of lemon and olive juice. This is a simple but delectable salad.

Smoky Halloumi
- Cut halloumi into 1/2 inch cubes and toss them in a spice blend of cayenne, lemon juice, honey and a tsp. of oil.
- Fry halloumi over medium heat in a frying pan. Bulgur Tabbouleh
- In a saucepan, bring 2 cups of water to a boil and add in 1 cup bulgur. Turn off the heat, cover the pan and let it sit for 5 minutes to cool.
- Chop apples, cucumber, mint, parsley and assemble it in a large bowl with the bulgur. . Cut cherry tomatoes into halves and add it in the salad, along with some lemon juice, a drizzle of extra virgin olive oil and salt and pepper to taste.
