Sarson Ka Saag is a creamy, healthy dish made with Mustard Greens and Spinach. It is poften made during the winter when green leafy vegtables are in season. It is often had with makki ki roti, a flatbread made with corn meal. This is a simple dish made with just basic ingredients and minimal spices. Serve this creamy dish warm with dollop of butter on top.

- Wash and roughly chop mustard leaves and spinach. Chop onions and green chillies.
- Heat a pan with melted ghee and add onions. Saute for 2 minutes then add in the mustard greens, green chillies, ginger and garlic. Mix well.
- Add spinach and cut chopped carrot.
- Add in salt to taste, 1/2 cup water. Cover and cook until vegetables are soft, about 5 to 7 minutes.
- Puree the veggies and add in 1/2 cup water. Add in the corn flour and simmer until saag thickens.
- Add fresh cream just before serving. Serve sarson ka saag with roti, paratha or preferably makki ki rotti (Indian style corn bread) .
