Sarson Ka Saag
Sarson Ka Saag is a creamy, healthy dish made with Mustard Greens and Spinach. It is poften made during the winter when green leafy vegtables are in season. It is often had with makki ki roti, a flatbread made with corn meal. This is a simple dish made with just basic ingredients and minimal spices. Serve this creamy dish warm with dollop of butter on top.

Ingredients

fresh bunch of mustard leaves

small bunch spinach leaves

onion

green chillies

tbsp chopped ginger

tbsp chhopped garlic

tbsp. ghee

tbsp. corn flour

cup water

cup fresh cream
Instructions

Wash and roughly chop mustard leaves and spinach. Chop onions and green chillies.

Heat a pan with melted ghee and add onions. Saute for 2 minutes then add in the mustard greens, green chillies, ginger and garlic. Mix well.

Add spinach and cut chopped carrot.

Add in salt to taste, 1/2 cup water. Cover and cook until vegetables are soft, about 5 to 7 minutes.

Puree the veggies and add in 1/2 cup water. Add in the corn flour and simmer until saag thickens.

Add fresh cream just before serving. Serve sarson ka saag with roti, paratha or preferably makki ki rotti (Indian style corn bread) .
