An easy egg omelette made with onions and bell peppers. Enjoy it for breakfast, main course or even as a mid day snack.

- Chop onion, bell pepper, garlic and green chilli finely.
- Heat a tsp.of oil in a non stick frying pan and saute the veggies for about 4 minutes on medium heat.
- Meanwhile break eggs into a glass bowl, add salt and pepper to taste and beat well with a fork.
- Remove the sauted' veggies and keep aside. In the same pan, add 1 tsp.oil, add in the beaten eggs and swirl the pan all around. Cook about 1 minute.
- When eggs start to cook on the edges, after a minute, place the onion and bell pepper mixture onto the egg on one side and fold the omelette into half. Serve warm.
