Dudhi Dhokli Nu Shaak (Bottle Gourd & Chickpea Dumplings In Tomato-Yogurt Gravy)

“Dhokli Nu Shaak” is a spicy dish from the Kathiawar region. While Gujarati recipes are often sweet & tangy, In Kathiawari cuisine, there is a generous dose of spice. Because of the dry weather, not many green vegetables grow in the region. The main crops are peanuts or groundnuts, sesame, sugarcane, wheat and millets. Pickles, onion and garlic are a prominent feature in Darbari communities. The two main communities are the Kathi and Ahirs – therefore the name Kathiawar. Growing up in Rajkot, the dhokli nu shaak was a popular dish from the region. This recipe was shared by our neighbour, Jadeja aunty.

    For Gravy:
  • Grease a round steel plate and keep aside.
  • Grate bottle gourd and mix it well with chickpea flour, chilli pd., turmeric, slat, cumin, coriander pd and asafoetida. Add a little water, only if necessary, to make a thick batter consistency (bottle gourd should have sufficient water). Mix in the fruit salt and pour this thick batter into the greased plate.
  • Boil water in a steam pot. Now put the plate of batter in the steamer and cook for about 20 to 25 minutes. Cool and cut the dhoklis into square or diamond shapes.
  • Heat a tsp. of oil in a pan and shallow fry the dhoklis n both sides. Keep aside.
  • Heat oil in a pan, add cumin and mustard seeds. When they splutter, add a tsp.m of chilli pd., turmeric, asafoetida and finely chopped ginger-garlic. Stir constantly, then add chopped tomatoes and salt. Cook about 5 minutes until tomatoes are well blended.
  • Meanwhile, add a tbsp. of chickpea flour and some water to the yogurt and blend well using a hand whisk.
  • After 5 minutes, add the yogurt mix to the sauce pan. Stir well and check seasonings.
  • Simmer a few minutes and finally add in the fried dumplings (dhoklis). Mix well, add a little garam masal and let simmer another 5 minutes. Garnish with cilantro. Serve dhokli nu shaak with roti or rice.
