Dal Makhani or maa ki dal is a popular Punjabi dish.

- Clean the urad and rajma and soak it in cold water for about 6 hours or overnight.
- Drain the water from the dal and put it in a pressure cooker along with the chopped green chillies and half the ginger and garlic . Add 3 cups of water, salt and cook the dal for about 10 to 15 minutes. Once it is cooked roughly mash the dal with a wooden spoon and keep aside.
- Chop the tomatoes and puree it in a blender.
- In a separate pan heat the ghee and add the cumin, fenugreek seed and asafoetida. Add the remaining ginger and garlic and sauté it for a minute. Add the chilli pd. and the pureed tomato and cook it for about 5 minutes.
- Add this to the cooked dal and let it simmer for a few minutes. Finally add the butter and garam masala. Just before serving, add a dollop of fresh cream.
