Dal Makhani

Dal Makhani or maa ki dal is a popular Punjabi dish.

Ingredients
  • cup black lentils
  • 1/4 cup red kidney beans (rajma)
  • 2 whole green chillies
  • 2 tsp.chopped ginger
  • 2 tsp.chopped garlic
  • 2 large tomatoes
  • 1/2 tsp. red chilli pd.
  • 1 tsp. garam masala
  • 2 tbsp.clarified butter (ghee)
  • 2 tbsp. butter
  • 1 tsp. cumin seeds
  • 1/2 tsp. fenugreek seeds (methi)
  • 1/4 tsp. asafoetida (hing)
  • Few pinch salt to taste
  • 2 tbsp. fresh cream
Instructions
  1. Clean the urad and rajma and soak it in cold water for about 6 hours or overnight.
  2. Drain the water from the dal and put it in a pressure cooker along with the chopped green chillies and half the ginger and garlic . Add 3 cups of water, salt and cook the dal for about 10 to 15 minutes. Once it is cooked roughly mash the dal with a wooden spoon and keep aside.
  3. Chop the tomatoes and puree it in a blender.
  4. In a separate pan heat the ghee and add the cumin, fenugreek seed and asafoetida. Add the remaining ginger and garlic and sauté it for a minute. Add the chilli pd. and the pureed tomato and cook it for about 5 minutes.
  5. Add this to the cooked dal and let it simmer for a few minutes. Finally add the butter and garam masala. Just before serving, add a dollop of fresh cream.
