Curried Collard Greens

Collard Greens belong to the same vegetable family such as cabbage and broccoli. Here is a curried version of this healthy vegetable using potatoes and mild Indian spices. You can substitute collard with cabbage, broccoli, spinach or kale in this recipe.

  • Clean collard greens thoroughly and chop roughly.
  • Peel and cut potato into small cubes.
  • Peel and chop onion finely. Finely chop garlic.
  • Heat oil in a pan and add cumin seeds to splutter.
  • Add chopped garlic and onions and saute for 1 minute.
  • Now add in the potato cubes, mix and cook covered for about 3 minutes.
  • Add collard greens, salt to taste and cover the pan again for 2 minutes until the greens wilt.
  • Then add in the rest of the spices and mix well. Now add in the chopped tomatoes and mix.
  • Add 1/4 cup water and cook covered about for another 5 minutes or until the water evaporates vegetables are cooked.
