Curried Collard Greens

Collard Greens belong to the same vegetable family such as cabbage and broccoli. Here is a curried version of this healthy vegetable using potatoes and mild Indian spices. You can substitute collard with cabbage, broccoli, spinach or kale in this recipe. https://www.youtube.com/watch?v=8wMbCQC35kg

Ingredients
  • 1 bunch of fresh collard greens
  • 1 medium potato
  • 1 small onion
  • 3 cloves of garlic
  • 1 tomato
  • 2 tbsp. oil
  • 1/2 tsp. cumin seeds
  • 1 tsp. red chilli pd.
  • 1/2 tsp. turmeric
  • pinch of asafoetida (hing)
  • 1 tsp. cumin pd.
  • a little salt to taste
Instructions
  1. Clean collard greens thoroughly and chop roughly.
  2. Peel and cut potato into small cubes.
  3. Peel and chop onion finely. Finely chop garlic.
  4. Heat oil in a pan and add cumin seeds to splutter.
  5. Add chopped garlic and onions and saute for 1 minute.
  6. Now add in the potato cubes, mix and cook covered for about 3 minutes.
  7. Add collard greens, salt to taste and cover the pan again for 2 minutes until the greens wilt.
  8. Then add in the rest of the spices and mix well. Now add in the chopped tomatoes and mix.
  9. Add 1/4 cup water and cook covered about for another 5 minutes or until the water evaporates vegetables are cooked.
