Cranberries are a kind of berries grown on evergreen dwarf shrubs or vines. These are mostly grown in North America (mostly US & Canada) and also in parts of Europe. These berries are used in many dishes around Thanksgiving & Christmas. The cranberry fruit has a sour/tangy taste. It is white in colour but as it ripens, it turns a bright red. Cranberry Bread is a very easy to make recipe and because of the red colour, it looks very festive – perfect to make for a thanksgiving or Christmas meal or even as a regular morning or afternoon snack. This Cranberry bread is a favourite recipe in our home and we sometimes substitute mango juice instead of orange. I have used cashew nuts in this recipe but you could use any nuts of your choice or availability (almonds, walnuts, pecans, pistachios) or even add raisins.

- In a bowl, mix all the dry ingredients together - the flour, baking powder, baking soda, salt, nutmeg & ginger powder if using. Keep aside.
- Next, coarsely chop the cashew nuts & cranberries either on a chopping board or using a food processor.
- Now put butter in a mixing bowl & mix all the liquid ingredients-the sugar, egg, essence, orange zest and juice.
- After mixing well, fold in the dry ingredients kept aside and mix well.
- Finally, fold in the chopped nuts & berries.
- Preheat your oven to 350 degrees F. Transfer the bread mix into a prepared baking/loaf pan, spread evenly & bake for about 55 to 60 minutes.
- Let the loaf cool on a wire rack for about an hour before you slice & serve.
