Hummus is a recipe that originated in the Middle East. It is a spread made using chickpeas, sesame, olive oil, paprika, garlic and other seasonings. It is commonly accompanied with pita breads. It is a delicious and nutritious dip used for veggies and snack.

For Hummus:
- Wash and soak one cup chickpeas in 4 cups of water for about 8 hours or overnight.
- Pressure cook the chickpeas for 5 to 6 whistles.
- After cooling, put the boiled chickpeas into a food processor and pulse it for 5 minutes.
- Now add rest of the ingredients - about 1/4 cup tahini, 3 cloves garlic, salt, 1 tsp. paprika, olive oil and freshly squeezed lemon juice. Pulse for a few more minutes, adding a few tbsp. of water if necessary.
- Check and adjust seasonings according to taste. Remove into a serving bowl.
- Make an incision with the back of a spoon and garnish with some extra virgin olive oil, paprika and parsley. For Tahini:
- Make tahini by dry roasting a cup of white sesame seeds and then grinding it to a fine paste by adding a little extra virgin olive oil, warm water and salt to taste.
