Classic Hummus Recipe

Hummus is a recipe that originated in the Middle East. It is a spread made using chickpeas, sesame, olive oil, paprika, garlic and other seasonings. It is commonly accompanied with pita breads. Ingredients
    For Hummus:
  • cup chickpeas
  • 1/4 cup Tahini
  • 1 tbsp. extra virgin olive oil
  • 3 cloves garlic
  • 1 tsp. paprika
  • a little salt to taste
  • For Tahini:
  • cup white sesame seeds (roasted)
  • 1/4 cup extra virgin olive oil
  • a little warm water
  • a pinch of salt (optional)
Instructions
    For Hummus:
  1. Wash and soak one cup chickpeas in 4 cups of water for about 8 hours or overnight.
  2. Pressure cook the chickpeas for 5 to 6 whistles.
  3. After cooling, put the boiled chickpeas into a food processor and pulse it for 5 minutes.
  4. Now add rest of the ingredients - about 1/4 cup tahini, 3 cloves garlic, salt, 1 tsp. paprika, olive oil and freshly squeezed lemon juice. Pulse for a few more minutes, adding a few tbsp. of water if necessary.
  5. Check and adjust seasonings according to taste. Remove into a serving bowl.
  6. Make an incision with the back of a spoon and garnish with some extra virgin olive oil, paprika and parsley.
  7. For Tahini:
  8. Make tahini by dry roasting a cup of white sesame seeds and then grinding it to a fine paste by adding a little extra virgin olive oil, warm water and salt to taste.
