Here is a vegetarian favourite recipe using cauliflower steaks. Cauliflower steaks, quinoa rice and a drizzle of coriander and mint sauce.

CILANTRO-MINT SAUCE
- Place all the ingredients for the sauce, except olive oil into a food processor jar and grind to a smooth paste.
- Remove into a bowl, check seasonings (salt and lime juice), add a drizzle of olive oil and mix well. QUINOA RICE
- Rinse quinoa in a fine mesh sieve under cool running water.
- In a medium sauce pan combine quinoa with 1 3/4 cups water or vegetable broth. Bring this to a boil, then simmer, covering the saucepan with a lid for about 15 minutes.
- Meanwhile, when the quinoa is cooking, saute the veggies in a medium frying pan, adding minced garlic and salt and pepper to taste. Keep it ready to mix with the quinoa.
- After 12 to 15 minutes, remove saucepan cover and let quinoa set for another 10 minutes to soak up the excess water. Fluff with a fork and gently mix in the sautéed veggies. CAULIFLOWER STEAK
- Preheat oven to 425 degrees F
- Trim off outer edges of the cauliflower head. Now, keeping the core intact, cut the cauliflower into 1 and 1/2 inch thick steaks. Slice the steaks carefully.
- Mix seasoning ingredients in a bowl and brush each steak first with some oil and then with a little of the spices on both sides.
- Heat a heavy bottom, oven safe pan with 2 tbsp. sun-flower or any high heat oil. Add a little butter for extra flavour.
- Carefully place cauliflower steaks onto the pan and sear for 3 to 4 minutes, place a slice of lemon into the pan at this stage. Then gently turn, and sear on the other side for another 3 to 4 minutes.
- When steaks are a brown, remove the pan from heat and place them in a pre-heated oven for about 12 minutes until the cauliflower steaks are fork tender. TO SERVE
- Place a little quinoa rice onto a serving plate. Now carefully place a cauliflower steak on top of the quinoa rice. Spoon/drizzle some of the reserved coriander-mint sauce around the edges and top off with some toasted almonds.
Notes
Cut the cauliflower into decent size steaks, at least 2 inches thick.
Use a heavy bottom, oven safe pan to sear the cauliflower steaks
Cajun Spices or any of your favourite spices may be used to season these steaks. You may use some garam masala, coriander powder, turmeric and cumin powder for an authentic Indian spiced steak.
