This is a tindora dish from Gujarat and goes well with rotis.

- Wash and cut giloda (tendli) vertically into stripes. Peel, wash and cup potato into cubes.
- Heat oil in a pan and add mustard and cumin seeds.
- When seeds splutter, add garlic, asafoetida and then the giloda and potato and mix well. Cover and cook about 10 minutes on low flame.
- Uncover pan, add rest of the spices and mix well.
- Add chopped tomatoes and sprinkle a few drops of water. Cover and cook until vegetable is fully cooked. This is a dry dish and goes well with roti or phulkas.
