Batata Tindora Nu Shaak (Giloda with Potatoes)

This is a tindora dish from Gujarat and goes well with rotis.

Ingredients
  • 500 g tendli or giloda
  • 2 potatoes
  • 1 tomato
  • 1/2 tsp. turmeric
  • 1 tsp. cumin pd.
  • 1 tsp. chilli pd.
  • a little salt to taste
  • 2 tbsp. oil
  • 1 mustard and cumin seeds
  • 3 garlic cloves (finely chopped)
  • a pinch of asafoetida
Instructions
  1. Wash and cut giloda (tendli) vertically into stripes. Peel, wash and cup potato into cubes.
  2. Heat oil in a pan and add mustard and cumin seeds.
  3. When seeds splutter, add garlic, asafoetida and then the giloda and potato and mix well. Cover and cook about 10 minutes on low flame.
  4. Uncover pan, add rest of the spices and mix well.
  5. Add chopped tomatoes and sprinkle a few drops of water. Cover and cook until vegetable is fully cooked. This is a dry dish and goes well with roti or phulkas.
