Mutton Roast is a classic spicy dish from Kerala and a must try recipe.

- Clean mutton and chop into 2 inch pieces.
- Dry roast the spices for roast marinade in a frying pan for about 2 minutes, stirring constantly so that the spices don't burn. (add in the whole spices first and then the powdered spices towards end of 2 minutes).
- Put all the marinade spices into a spice grinder and grind adding a little water.
- Rub the marinade paste well onto the mutton pieces, along with some salt and vinegar/lemon juice and keep this aside for about 20 to 30 minutes.
- Now cook the mutton on low flame for 30 minutes until the mutton is fully cooked and the gravy becomes a dry consistency.
- Meanwhile chop onions into long thin slices. Heat oil in another big wok or frying pan, add onions and fresh curry leaves. Fry until onions turn a golden brown. Add a tsp. chilli powder, a little coriander powder and the cooked mutton pieces. Stir well and fry for about 5 minutes till the onion mixture coats well on the mutton. Serve mutton roast with Kerala appams, rotis or even with rice and a curry dish.
