Mutton Roast – Kerala Cuisine

Ingredients
  • 1 kg mutton
  • 3 onions
  • 3 sprigs of fresh curry leaves
  • 2 tsp. red chilli powder
  • 2 tbsp. coriander powder
  • 3 tbsp. oil (preferably coconut oil)
  • Roast Marinade:
  • 1 tsp. turmeric
  • 1 whole garlic
  • 1 inch piece ginger
  • 1 tsp. fennel seeds
  • 2 inch cinnamon stick
  • 7 cloves
  • 2 green cardamom
  • 1 black cardamom
  • 1 bay leaf
  • 8 black peppercorns
  • 1/4 nutmeg
  • 3 tbsp. white vinegar (or lemon juice)
  • a little salt to taste
Instructions
  1. Clean mutton and chop into 2 inch pieces.
  2. Dry roast the spices for roast marinade in a frying pan for about 2 minutes, stirring constantly so that the spices don't burn. (add in the whole spices first and then the powdered spices towards end of 2 minutes).
  3. Put all the marinade spices into a spice grinder and grind adding a little water.
  4. Rub the marinade paste well onto the mutton pieces, along with some salt and vinegar/lemon juice and keep this aside for about 20 to 30 minutes.
  5. Now cook the mutton on low flame for 30 minutes until the mutton is fully cooked and the gravy becomes a dry consistency.
  6. Meanwhile chop onions into long thin slices. Heat oil in another big wok or frying pan, add onions and fresh curry leaves. Fry until onions turn a golden brown. Add a tsp. chilli powder, a little coriander powder and the cooked mutton pieces. Stir well and fry for about 5 minutes till the onion mixture coats well on the mutton. Serve mutton roast with Kerala appams, rotis or even with rice and a curry dish.
