This roti is a kind of unleavened flatbread. The basic recipe uses whole wheat flour, salt, oil & water. Here the use of fresh spinach adds a whole new variation to the plain roti -nutritious & delicious! You can even add a little besan or chickpea flour to the dough.

- Dust the ball with some flour. Using a rolling pin, roll out one portion into a circle about 6"diameter circle. Don't worry if the shape does not come out perfect , it gets there with practice (but it will taste just as fine).
- Fry the rotis on the frying pan for about 2 minutes or until bubbles appear, then turn & cook on the other side for 1 or 2 minutes. Smear a little melted ghee on top of the cooked roti & repeat with the other balls. Serve hot.
