Palak Roti (Spinach Flatbread)

This roti is a kind of unleavened flatbread. The basic recipe uses whole wheat flour, salt, oil & water. Here the use of fresh spinach adds a whole new variation to the plain roti -nutritious & delicious! You can even add a little besan or chickpea flour to the dough.

Ingredients
  • 2 cups whole wheat flour
  • 1/4 cup besan (optional)
  • 400 gms. Spinach leaves
  • a little salt to taste
  • 2 tbsp. oil
  • some melted ghee (optional)
  • some water (to knead the dough)
Instructions
  1. Clean & roughly chop spinach.
  2. Take the flour in a deep bowl, add finely chopped spinach & just enough water to bind into a smooth dough. Cover this dough &!eave aside for about 20 minutes.
  3. For making the rotis, heat a non stick pan. Divide the dough into 12 medium portions.

  5. Dust the ball with some flour. Using a rolling pin, roll out one portion into a circle about 6"diameter circle. Don't worry if the shape does not come out perfect , it gets there with practice (but it will taste just as fine).
  6. Fry the rotis on the frying pan for about 2 minutes or until bubbles appear, then turn & cook on the other side for 1 or 2 minutes. Smear a little melted ghee on top of the cooked roti & repeat with the other balls. Serve hot.
