Vellarika Pachadi is a Kerala dish made with cucumbers and yogurt. It is often served as a side accompaniments or pickle.
Ingredients
- Grind to a coarse paste
- Tempering/Tadka:
Instructions
- Beat yogurt and keep aside.
- Grind coconut, green chillies, ginger, cumin, fenugreek and mustard seeds into a coarse paste.
- Cook cucumber in 1/4 cup water for about 5 minute. Add salt to taste, along with the ground coconut paste and cook another 5 minutes until the water evaporates.
- Turn off the heat and add in the beaten yogurt. Mix well.
- Now heat a tsp. of coconut oil in a small pan. Add mustard seeds and when it splutters, add in 2 dried red chillies and a sprig of curry leaves. Turn off heat and pour this tempering over the cucumber and yogurt mix.
