Ingredients

cup beaten yogurt

1
English cucumber
(chopped fine)

1/4
cup water
-
a little
salt to taste
Grind to a coarse paste

cup grated coconut
-

green chillies
-

tsp. ginger
(chopped)

1/2
tsp. cumin seeds

1/4
tsp. mustard seeds

1/4
tsp. fenugreek
Tempering/Tadka:

tsp. coconut oil
-
1/4
tsp. mustard seeds
-

dried red chillies
-
1
sprig of curry leaves
Instructions

Beat yogurt and keep aside.

Grind coconut, green chillies, ginger, cumin, fenugreek and mustard seeds into a coarse paste.

Cook cucumber in 1/4 cup water for about 5 minute. Add salt to taste, along with the ground coconut paste and cook another 5 minutes until the water evaporates.

Turn off the heat and add in the beaten yogurt. Mix well.

Now heat a tsp. of coconut oil in a small pan. Add mustard seeds and when it splutters, add in 2 dried red chillies and a sprig of curry leaves. Turn off heat and pour this tempering over the cucumber and yogurt mix.
