Vellarika Pachadi – A dish made with cucumber and yogurt

Vellarika Pachadi is a Kerala dish made with cucumbers and yogurt. It is often served as a side accompaniments or pickle.

Ingredients
  • 1 cup beaten yogurt
  • 1 English cucumber (chopped fine)
  • 1/4 cup water
  • a little salt to taste
  • Grind to a coarse paste
  • 1/2 cup grated coconut
  • 2 green chillies
  • 1 tsp. ginger (chopped)
  • 1/2 tsp. cumin seeds
  • 1/4 tsp. mustard seeds
  • 1/4 tsp. fenugreek
  • Tempering/Tadka:
  • 1 tsp. coconut oil
  • 1/4 tsp. mustard seeds
  • 2 dried red chillies
  • 1 sprig of curry leaves
Instructions
  1. Beat yogurt and keep aside.
  2. Grind coconut, green chillies, ginger, cumin, fenugreek and mustard seeds into a coarse paste.
  3. Cook cucumber in 1/4 cup water for about 5 minute. Add salt to taste, along with the ground coconut paste and cook another 5 minutes until the water evaporates.
  4. Turn off the heat and add in the beaten yogurt. Mix well.
  5. Now heat a tsp. of coconut oil in a small pan. Add mustard seeds and when it splutters, add in 2 dried red chillies and a sprig of curry leaves. Turn off heat and pour this tempering over the cucumber and yogurt mix.
