“Bharwa Baingan” is a popular eggplant dish using small rounded eggplants. Here in this recipe, I have added potatoes too.

- Peel potatoes and wash them along with eggplants. Make two slit along the centre of all the vegetables (without cutting the vegetable) and keep aside
- Make a smooth paste of the peanuts, along with the rest of the spices, salt and garlic in a blender.
- Stuff the potatoes and eggplants with the paste.
- Heat oil in a large non stick pan and put the eggplants and the potatoes without overcrowding. Fry on high heat for about 2 or 3 minutes, till they turn brown on the outside. Then flip the vegetables and let it brown on the other side too for a couple of minutes.
- Gently pour in a cup of water, cover the pan and cook on low heat until the potatoes and eggplant is fully cooked, about 20 minutes,
