Aloo Bharwa Baingan (Baby Potatoes And Eggplants In A Garlic Peanut Sauce

"Bharwa Baingan" is a popular eggplant dish using small rounded eggplants. Here in this recipe, I have added  potatoes too.

Ingredients
  • 6 or 7 small round eggplants
  • 6 or 7 small baby potatoes
  • 1 head garlic (about 8 cloves)
  • 1/2 cup peanuts
  • 1 tsp. cumin seeds
  • 2 tsp. fennel seeds
  • 1 clove
  • 1 tsp. red chilli pd.
  • 1/2 tsp. turmeric pd.
  • 2 tsp. coriander pd.
  • a little salt to taste
  • 3 tbsp. oil
  • cup water
Instructions
  1. Peel potatoes and wash them along with eggplants. Make two slit along the centre of all the vegetables (without cutting the vegetable) and keep aside
  2. Make a smooth paste of the peanuts, along with the rest of the spices, salt and garlic in a blender.
  3. Stuff the potatoes and eggplants with the paste.
  4. Heat oil in a large non stick pan and put the eggplants and the potatoes without overcrowding. Fry on high heat for about 2 or 3 minutes, till they turn brown on the outside. Then flip the vegetables and let it brown on the other side too for a couple of minutes.
  5. Gently pour in a cup of water, cover the pan and cook on low heat until the potatoes and eggplant is fully cooked, about 20 minutes,
