Recently, our son decided to go vegetarian for a few weeks. Dal and lentils are an excellent source of protein. So this is a dish that my meat loving son loves. The secret to this dish is soaking the soya nuggets or chunks and using spices you use for meat dishes.

- Bring a large pan of water to complete boil. Add salt and turn off heat. Soak soya nuggets in this water for 20 minutes.
- Heat oil in a pan, add cumin. When seeds crackle, add chopped onions and fry unitl evenly browned. Add ginger garlic paste. turmeric, chilli pd., and finely chopped tomatoes. Saute until the oil leaves the side of the pan about 4 to 5 minutes.
- Now drain the soaked soya nuggets (reserving about cup of the water). Add the soya nuggets to the pan and cook about 5 minute on medium heat until the spices coat the nuggets. Now add 1 cup water, let it come to a boil and then add garam masala. Simmer, covered about 10 minutes on low heat, adding a little more water if necessary. Garnish with chopped cilantro.
