Sabudana Vadas also known as sago tikkis are a popular snack from India, especially in the state of Maharashtra. It is made from tapioca or sago pearls, potato & peanuts. These are delicious, tasty tea time treats, crispy on the outside & chewy inside. Sago has a tendency to get soggy, so the trick is in making it at the right temperature. Heat oil & then turn it down medium before you fry the vada. A little rice flour or amaranth flour (about 2 tbsp.) can also be added to the mix before making to make the vada crispy. The popular method is deep frying. But it can be shallow fried with very little oil on a non stock frying pan, air fryer or bake them in the oven at 350 degrees F for about 12 minutes.

- Wash & soak Sabudana in 3/4 cups water for about 3 hours.
- Boil, peel & mash potatoes.
- Coarsely grind peanuts. Finely chop green chillies, ginger & coriander leaves.
- Drain Sabudana & add mashed potatoes, chillies, coriander leaves, ground peanuts, chilli pd., coriander pd., cumin pd., salt & lemon juice. Mix well & form into lemon sized balls, flatten them into vada shapes & keep aside.
- Pan Fry Method: Heat oil in a pan & deep fry the vadas till they are golden brown. Serve hot with green mint & cilantro chutney.
- Air Fryer: Preheat Air Fryer to 400 degrees F. Then brush a little oil in the Air Fryer pan and layer the vadas in. Set the timer to 15 minutes and air fry them until evenly brown on both sides. (Flip the vadas once in between after about 7 or 8 minutes).
- Oven Method: Preheat oven to 400 degrees F. Layer the sabudana vadas onto a baking sheet and fry them about 20 minutes (10 minutes each side, flipping them in between).
